INGREDIENTS
1/2 POUND BROCCOLI (FRESH OR FROZEN)
1/4 CUP NUTRITIONAL YEAST
1/4 CUP PISTACHIOS
2 CLOVES OF FRESH GARLIC CHOPPED
TBSP OF FRESH CHOPPED BASIL
JUICE FROM 1/2 LEMON
EVOO
S+P TO TASTE
DIRECTIONS
STEAM BROCCOLI FOR 5 MINUTES UNTIL VIBRANT GREEN
RINSE IN COLLENDER WITH COLD WATER
ADD BROCCOLI + BASIL LEAVES INTO FOOD PROCESSOR OR HIGH SPEED BLENDER
PULSE + STREAM IN EVOO UNTIL SMOOTHISH
ADD IN NUTRITIONAL YEAST, PISTACHIOS, GARLIC, + LEMON JUICE
PULSE AGAIN WHILE STREAMING EVOO UNTIL YOU GET A SAUCY CONSISTENCY

Since shelter in place became our new normal our relationship food has completely changed. Gone are the days of popping over the store for a couple of missing recipe ingredients. Instead my quarantine kitchen consists of making it before it goes bad and this, plus this, could equal something like this.
Cue some very happy kitchen accidents like my By Demand Broccoli pesto. Using the principles of pesto which usually include pulsing fresh basil, olive oil, garlic, parmesan, pine nuts, and salt + pepper into a herby magic green sauce. I took to my pantry and freezer for some unexpectedly delish recipe substitutes.
The result was the birth of a drool worthy, vibrant, healthier version of the Italian classic sauce. Loaded with potassium, fiber, and vitamins K and C, this vegan friendly broccoli based sauce is also cheeseless. But, dairy lovers will hardly notice as the nutritional yeast serves up that extra nutty punch of flavor in place of parm.
Serving it over some gluten free fresh gnocchi sent Instagram into a recipe frenzy. So today I’m sharing my by popular demand broccoli pesto recipe.
